Poached Pears in Blood Orange Juice with Honey Thickened Yogurt

Serves 4
  • 2 cups plain yogurt
  • 2 tablespoons honey
  • 1 tablespoon gelatin
  • 2 tablespoons hot water
  • 4 beurre bosc pears (or other variety), peeled and halved
  • juice of 3 blood oranges
  • 2 cinnamon sticks
Sprinkle gelatin over the hot water and let it stand for 10 minutes to soften. Mix thoroughly with the yogurt and honey. Refrigerate until thickened – start preparation a few hours before needed.
Place prepared pears in a saucepan. Poach in blood orange juice with cinnamon sticks until fruit is soft and glowing pink, about 15 – 20 minutes. Remove pears with a slotted spoon and keep warm, boil the juice to reduce it slightly, remove cinnamon sticks.
Serve pears with the juice and with the honey thickened yogurt.
